For the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Cocktail (makes 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Directions
Making the Citrus Syrup: Put all the items into a saucepan, bring to a simmer, stirring until the sugar dissolves. Next, turn off the heat and let it to reach room temperature fully. Pour into an sealable bottle, seal keeping it in the refrigerator, it can be stored for up to a month.
For the Batch Mix: Combine the specified liquids in a large bottle, allow it to infuse for 60 minutes, then strain best through a fine cloth, making it fully clarified.
When ready to serve: Measure 85ml of the cocktail base into a mixing glass filled with ice, gently stirring carefully for a minute to chill. Strain into an cold coupe glass or similar, decorate with the cranberries and finish with a brief mist of mandarin oil above the glass.
